Simple Leek and Cauliflower Soup Recipe

A quick and easy soup using only 5 ingredients

  • 3 leeks
  • 1 cauliflower
  • 2 bay leaves
  • 1 litre stock
  • 1 bunch parsley


  • Chop leeks and cauliflower and place in a large pan with 2 tbsp olive oil. Saute for 5 minutes.
  • Add chicken or vegetable stock and bay leaves.
  • Simmer gently for 15-20 minutes, until the vegetables are soft.
  • Add finely chopped parsley for the last 5 minutes, season with salt and pepper to taste then bend until smooth.
