Simple Leek and Cauliflower Soup Recipe
A quick and easy soup using only 5 ingredients

Cook Time 20 mins
- 3 leeks
- 1 cauliflower
- 2 bay leaves
- 1 litre stock
- 1 bunch parsley
Chop leeks and cauliflower and place in a large pan with 2 tbsp olive oil. Saute for 5 minutes.
Add chicken or vegetable stock and bay leaves.
Simmer gently for 15-20 minutes, until the vegetables are soft.
Add finely chopped parsley for the last 5 minutes, season with salt and pepper to taste then bend until smooth.
